Cooking: a common misconception
Contrary to what you sometimes hear, olive oil handles cooking very well — much better than most other vegetable oils, including coconut oil.
Thanks to its richness in oleic acid (a monounsaturated fatty acid stable under heat), Olive Oil 800+ is more resistant to high temperatures than many so-called “cooking oils.”
It easily withstands cooking temperatures up to 180–190°C (356–374°F).
The key is simply not to exceed its smoke point (about 200–210°C / 392–410°F), which is more than enough for the vast majority of pan or oven cooking.
